The diagram provides information about the process by which soft cheese is produced, outlining the main stages involved from the initial mixing stage to the final cooling stage.

Overall, the production of soft cheese is a linear process consisting of several stages, beginning with the mixing of water and milk and ending with the final cooling of the filtered mixture.

The process begins with mixing. Initially, water and milk are mixed together to form a thick liquid mixture. Following this, the mixture is cooled to 9°C for two hours. After this, salt is added before the mixture is fermented at 37°C for six hours.

The subsequent stage involves evaporation, during which the mixture is heated to 100°C for eight hours. The mixture is then passed through a filter, which removes the waste water. Finally, the filtered mixture is cooled to 5°C for eight hours. After this final stage, the soft cheese is ready for consumption.
